We live here on the Mornington Peninsula, and started Butterken Bakery in Mt Eliza because we’re passionate about bringing German bread culture to Australia.

We are dedicated to handcrafting sourdough bread of artisan quality, with a modern approach to health, sustainability and taste.

What is sourdough?

Sourdough is simply a combination of water and flour. Have you ever wondered about the science behind it? Wild yeast and bacteria can be found in the air, on the surface of grains and even on your skin. When you combine water and flour and let it ferment at the right temperature, the good bacteria and yeast start to consume the flour, producing gas that can leaven ( raise) bread.

Our bread is known for its moist crumb, which is achieved by using a high water content and sourdough. As a result, machine slicing can be challenging without damaging the loaf. Hence, we don't slice our bread. Additionally, the thick crust plays a vital role in preserving the moisture within the bread.
